Adding Humidity

When it comes to barbecuing, there is a lot of conflicting information out there about adding humidity to your smoking process. Should you use a water pan? Is it even necessary to put water in your smoker?

Adding water to the smoker's water pan creates the ideal cooking condition for low and slow BBQ. The water increases the humidity level in your smoker, and the resulting condensation helps meat cook at a low temperature. This helps smoke adhere to the meat which makes it smokier and more flavorful.

Since you are cooking the meat for a longer time, the connective tissue and fats break down, and result in a moist, tender, and juicy finished product.

Another great way to add humidity to your smoking process is to get yourself some basic automotive sponges. Get the sponges soaking wet and stand them upright in your smoker during this process. The sponge's surface area will allow the water to be evaporated off and into the air of your smoker, giving your product extra humidity.

Seasoning

When picking the right BBQ seasoning, it all depends on the kind of flavor you want your meat to have. Do you want a nice sweet flavor? Or do you want a flavor with some heat to it? Do you want your finished product to have more of a Texas-style taste to it or Kansas City Style taste? These are all questions that need to be answered before you can start looking for your seasoning.

If your looking for a sweet flavor, I recommend trying EAT Barbecue Sweetness Rub. This seasoning has a nice touch of sweetness but isn't going to overly sweeten your meat. This rub is excellent on ribs, pork butts, pork chops and chicken.

If your'e looking for some BBQ seasoning with a little more heat, then I would recommend JP's Custom Smoke Sweet Heat. This can be used on a variety of meats, especially chicken and ribs!

Rubs

We have a few different BBQ Rubs that will give you a different style flavor from various BBQ states, but in my opinion the best BBQ comes from the midwest. Kansas City Style Bold and Spicy Rump Rub is one of my favorites. It will give your BBQ a nice KC-style flavor, and it works excellent with briskets, ribs, pork butts, and really any pork and meat.  

Another great rub is Excalibur's Texas Style Rump Rub. This rub works great with brisket, ribs, and especially pork butts! For best results, rub the night before to let the taste really sink in. If you are doing pulled pork, make sure you sprinkle some seasoning back on once you shred it. This will give your finished product the great taste of Texas BBQ.

Sauces

Picking the proper BBQ sauce for your meat is almost as important as cooking your meat correctly. With BBQ, the sauce is very important to the flavor of your finished product. Below are our top 3 best-selling BBQ sauces:
