Super bind is a blend of carrot fiber and potato starch. Carrot FIber gives you 26 times its weight in water holding capacity and potato starch gelatinizes when it is heated to 145°. This is important because that is the temperature at which proteins really start to release water and the starch is ready to absorb all of that back up and prevent it from cooking out of your product. Available in 0.75 lb and 3 lb packages.
