Why Use High-Temp Cheese?
High Temp Cheese is a natural cheese product that is produced in a special way to give it a higher melting point than cheese would usually have. This is done to prevent the cheese from melting, then leaking out of your sausage and creating cavities where the cheese was before the cooking began. Since this cheese will resist melting well above normal internal temperature for sausage cooking when you bite or cut into your sausage the diced cheese will still be there, in the same form, with the same amount of flavor!

What flavors are available?
Walton's offers 1- and 5-pound bags of Cheddar, Mozzarella, Swiss, Hot Pepper, and Ghost Pepper Cheese.
Which flavor should I use?
This all comes down to personal preference, some people use nothing but Cheddar, and some people like to switch cheeses to better match the flavor of the seasoning they are using. Below are some of our favorite pairings, and some advice on when to use what flavor
Cheddar Cheese
- Best Pairing is with the Habanero BBQ Summer Sausage or Snack Stick or Apple Bratwurst
- Pairs well with almost anything, cheddar is very versatile
- No need to avoid the cheese with any flavor profile
Mozzarella Cheese
- Best Paring is with Supreme Pizza Bratwurst Seasoning
- Pairs well with any Italian themed or tomato heavy seasoning
- Avoid when a low pH is being attempted, this cheese might not pair well with a strong "tang"
Swiss Cheese
- Best Pairing is with the Swiss Style Fresh Bratwurst Seasoning or the Reuben Flavored Bratwurst Seasoning
- Pairs well with any traditional, mild flavored sausage
- No need to avoid the cheese with any flavor profile
Hot Pepper Cheese
- Best Pairing is with Willies Snack Stick Seasoning
- Pairs well with most flavors, has more of a pepper jack flavor
- Avoid when you are wanting to make a very spicy sausage
Ghost Pepper Cheese
- Best Pairing is with Gigawatt Hot Snack Stick Seasoning
- Pairs well with any seasoning that you want to make significantly hotter, this is not for the faint of heart!
- Do not use unless you REALLY like heat!
